What's For Dinner: Chicken Asian Lettuce Wraps

Ingredients
  1. 20 oz of Chicken (about 3 or 4 chicken breasts), cut into bite sized pieces with all bone, skin, and fat removed.
  2. 1 can water chestnuts, drained (chopped if desired)
  3. 2 Tbsp scallions
  4. 2 Tbsp sliced almonds, raw
  5. 6 Romaine Lettuce leaves
  6. 1 Tbsp brown sugar, unpacked
  7. 2 Tbsp lite soy sauce
  8. 1/2 Tbsp Sesame Oil
  9. 2 Tbsp Kraft Light Asian Toasted Sesame Dressing
Directions

  1. Cut chicken into bite size pieces and coat a skillet with non-stick cooking spray over medium heat. Place chicken in skillet along with the water chestnuts that have been drained. Cook until the chicken is cooked through.
  2. While the chicken and water chestnuts are cooking, combine the brown sugar, lite soy sauce, and sesame oil then whisk.
  3. Drain any liquid from the chicken and the water chestnuts. Return to heat, add the sauce mixture. Stir in mixture to coat.
  4. Next cut the scallions and wash/pat dry romaine lettuce leaves.
  5. When chicken has been slightly browned (or just 2-3 minutes later), remove chicken to plate. Add the Kraft Lite Asian Toasted Sesame dressing and stir to coat. Add scallions and the sliced almonds.
  6. Spoon in about 3/4 of a cup into each leaf. Some may be left over. Divide amongst the 6 wraps.
  7. Serves 2 people.
