Well AJ and I have been doing our health food kick for one week now and it has been going really well.. I couldn't work out as much as I would have liked to last week because I have been sick.. So I was trying to get myself healthy before I went on this work out kick. I have had this horrible cough. It has really been taking its toll during the night time. I haven't slept really well in over a week. Lat night, I did wake up once but it was only for a few seconds and I didn't loose my lungs coughing so I slept pretty well. I got ready for church this morning and went to go wake AJ up and he didn't want to get up. He asked to stay home from church cause he stayed up to late last night catching up on the Good Wife. It was like trying to get a teenager out of a bed. Granted I have never had a problem getting out of bed even in high school. I am pretty much a morning person minus the energy. I knew he would be upset if he missed church again so I persisted in getting him up. I hate acting like a mom! I had to go to church because the choir was performing. He finally did get up though.
We went out to lunch with Randy and his new girlfriend Jewel. She is super nice. We liked her a lot. She is also a red head. She seems a lot like me but way more outgoing. Hopefully we will be able to hang out again with them soon. Hopefully she liked us as well! :)
Today I finally felt good enough where I could actually do something with myself. I decided to go up to our workout room and do my workout on the elliptical. I did 56 minutes on that thing and now I am 270 calories lighter lol :) While I am in the middle of my workout some Arab came in (seriously not trying to be racist that was just his nationality) with his jeans on and a long sleeve shirt. He said hi to me and then started walking around and staring at all the machines and then looking out all the windows. It was really weird!
Diezel just broke the squeaker on the most annoying ball ever!!! Thank you!!! I always have to put that thing away when I am working.

The Haunting of the Thin Mints....
So as you know AJ and I started really watching our diet. Yesterday was the first full day of doing this. I had 5 cups of water WOW!!! If you know me that is insane. For breakfast I had 5 oz of Orange Juice, Yoplait light strawberry yogurt and bear naked fit vanilla almond crunch granola mixed in m yogurt. For lunch, I had 6 strawberries cut up on top of two cups or romaine lettuce with olive oil and balsamic vinegar as the dressing. I also put the granola on top of my salad. I had to get some more protein so I drank a cup of 1% milk with carnation instant breakfast. For dinner I made oven baked brown rice which was actually pretty amazing in the oven.
Fool Proof Oven Baked Brown Rice
Ingredients
- 1 1/2 cups Brown Rice (uncooked)
2 1/3 cups Water
2 tsp Olive Oil
1 tsp Salt
Directions
Preheat the oven to 375 F and move a rack to the middle position. Spread the rice into an 8-inch square, glass baking dish. In a covered saucepan on the stove, bring the water and oil to a boil over high heat. Once it begins to boil, stir in the salt and pour over the rice. Cover the baking dish tightly with a double layer of foil. Bake for one hour, until tender. Remove from the oven and uncover. Fluff the rice with a fork, cover with a clean kitchen towel; let rice stand 5 minutes. Uncover for another 5 minutes, then serve immediately.
I also added a 2 teaspoon of curry to the boiling water along with 2 tablespoon of soy sauce. AJ and I also shared 1 chicken breast. I marinated it in worcestershire sauce, a little pinch of brown sugar, and some red pepper flakes. For our vegetable we I made roasted edamame here is the recipe:
Roasted Edamame
Ingredients
- 1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon black pepper
1/2 teaspoon kosher salt
1/8 teaspoon cayenne pepper
2 cups ready-to-eat shelled soybeans (edamame)
Directions
Preheat oven to 375 degrees F.
In small bowl mix all the ingredients until coated well. Roast beans in a shallow baking dish, uncovered, for 12 to 15 minutes, stirring once, until soybeans begin to brown. Yields 4, 1/2 cup servings.

It was actually really good.
For my workout I walked the boys on their normal walk with me, then I did my kick boxing workout with the xbox 360 kinect, and did some strengthening exercises.
Of course on Saturday before we went on this watching what we eat kick I bought thin mint girl scout cookies and put them in our freezer they have been haunting me... lol. I haven't had those cookies in about two years. Which is crazy. I forgo how good they were and now they keep screaming eat me from the freezer. hahaha.
Why does eating healthy cost so much?
I haven't really eaten that much today. I got up late so all I had for breakfast was a Clif Crunch Chocolate Chi[p granola bar, also I got up late so I didn't have a chance to pack my lunch. Luckily the family I watch a health crazy. I had one flour tortilla, an orange, and a Clif crunchy peanut butter bar. I only have to walk the boys today and do some strengthening exercises.
For dinner we are having organic meatless spaghetti and either a salad or asparagus.

Sparkpeople
Well today AJ and I started a diet. It includes eating healthy (obviously), no fast food, each one of us has to walk the dogs once a day, and be on a workout plan. Which we are using sparkpeople.com to help us a long on our journey to a healthy life. Its free! You can track your nutrition and your fitness including all of your goals. It also gives you a meal plan if you choose to follow, but you can add your own recipes and it will tell you how many calories your recipes are. You can also track your water consumption for the day.It is a pretty cool site.
I also got sick this weekend, so dumb... At least it wasn't aweful..
We have owned Moose for two weeks today.. He is such a sweet baby. I am so glad he is apart of our family.
Tonight is a meatless dinner. It will either be cereal or brown rice with edamame or broccoli.. So I will let you know how our healthy life goes :) Have a great evening.

So disgusting!!!!
So today was a good day.. At least most of it was.. I woke up at 3:30 am with this vomiting noise. I flew up and Moose was throwing up again. Poor baby. That was the second time yesterday. Of course that meant when I got up I had to call the vet because on his surgery paperwork it said to let them know if he vomits. What a way to get woken up!!! Luckily, I went to bed early and still got a good nights rest. When I woke up I called the vet and they told me to fast him until the doctor got into the office to talk to me. I felt so bad not feeding him. Anyways, I had to be at work at 8:30 and got a call from the doctor about that same time. She said that is could of been his pain medicine that made him nauseated so she set aside some nausea medicine at the vets. If the vomiting does continue he has to go back to the vet and get an x-ray taken hopefully it will not continue. Luckily, so far he has not vomited today.
Tonight was AJ and I's date night for valentine's day.. It was an interesting one to.. lol Not because of the company but because of the food. He picked me up from work and had an orchid in the car for me..
I always wanted to have an orchid. He told me that when he got to the store he had no idea what an orchid looked like. So he asked someone who worked at Publix if she knew what an orchid looked like and her answer was NO she didn't know what it looked like.... lol. She said she felt bad because she was a lady and had no clue.. I also thought it was funny because right before Valentine's Day, Publix had a ton of orchids... Shows how much people do not know about their own job. Anyways, to feed the orchid you only have to put three ice cubes in it once a week. Now that is my type of plant. Should I name the orchid. One of my friends likes to names her plants. Do you ever name your plants? What should I name it?
The next thing we did was head to the Blockbuster on 96 because it is closing and all the dvds were $3.. Most of the good ones were gone but we did find a few that we wanted to buy. We bought Matchstick Men, Terry Factor live from Vegas (Comedy), Hardball, New York I Love You, and Going the Distance.
Then, AJ wanted to take me to a restaurant we have never been to before. It is called Garcia's (mexican restaurant) and it is in the Kroger shopping center on 96. We walked in and it was so dark in there which isn't a big deal but I would think it would be a big deal for all the elderly in there who might have a hard time reading the menus. We ordered a water, a coke, and some cheese dip. Well when the chips arrived I was shocked because they looked like Tostitos chips. Little did I know the surprise I was in for next. I took a bite of my chip and it was stale (NASTY).... They were hot from the warming lamp but definately stale. It looked like they went up to the store bought some tostitos on sale that were old and put them under the lamp. I was trying not to say anything cause I didn't want to be negative about the experience. AJ was the one who spoke up about it and asked me if I wanted to leave, so we paid and left that horribly nasty place. Also, the prices were extremely expensive for a mexican restaurant... Which is insane to think about. That was first restaurant the we both have ever left even before the meal started. Note to everyone who lives up here do not go to Garcia's.
We ended up going to Chuy's (YUM)....... We shared the chicken fajitas which were amazing. Then for dessert we got the sopapillas. They were so good. It was so nice to go out with him. We cracked the whole time on the horrible restaurant.
Now I am watching my Thursday night addiction Vampire Diaries.... My other shows for tonight are Law & Order SVU (that was on last night but didn't get to watch it), Perfect Couples, CSI, Royal Pains, The Mentalist, and Fairly Legal. What are you watching tonight?

Magic...Is that your name?
Well I haven't written in a couple days... Oops, I have been really busy. This weekend was really nice. Especially with the Awesome weather. The high tomorrow is going to be 70.. Friday night Rachel (my boss) took the kids and I to Chuy's and then we went to Marble Slab!!!! I also bought Enchanted for $7.50 that is insane for a Disney movie.
On Saturday, I took the boys to the Park and took them for a long walk to bad it was really muddy out.. No puppies were out there either. Moose did really well off leash though. Then I actually cleaned the car out. I even vacuumed! Go ME!! lol. Then Christina and I went and painted some pottery. She did another bowl for Gracie and I did a treat jar for the boys. We get them back on Saturday so I will post pictures then. If I can get pictures off my phone I will try to put some before on here as well.
Sunday we decided not to go too church because AJ had been working his tail off all weekend and was exhausted. He also had to work Sunday night and a double on Monday (Valentine's Day).
Monday, I had to wake up extremely early take Moose to the vet to get neutered. Poor baby did not have a good Valentine's Day. He was so confused. I felt so bad because he had to stay there over night. His first visit to the vet with us was to have surgery. We picked up Tuesday at noon and he was so pitiful. He isn't aloud to do anything for 10 days. Do they know how hard that is. We have to keep an eye on the boys and if they try to start playing rough we have to separate them.
My parents also got a dog on Monday. Well he was a test run to see how he fit in with the family. Today he had a wellness exam and it went really well so they are going to adopt him :) ... They are so happy it is great to hear them like that because they have had so many losses in the past couple months with animals. Everyone said he is so sweet. He is a dark chocolate lab mix. Anyways their name choice right now is Magic, Koal, and Buddy. I like Magic the best. Then he can get an Orlando Magic collar.

Thank You for the Sun!
Well yesterday was not a very eventful day. During the night I woke up at some point because this thing was leaning right up against me. AJ had not come to bad yet so I turned the light on and low and behold there is Moose cuddled up to my back side and Diezel was sleeping in his crate. hahaha... There was something wrong with that picture. So I put Moose in his crate and made Diezel go to his bed. We started Tuesday night opening the crate door so Moose didn't have to be locked up. We need to get both of the boys new beds.
I worked from 8-4.. All the church activities got cancelled so I couldn't go to choir practice. At least it was cancelled because it took hours for people to get home from work yesterday because of the crazy weather that actually stuck to the road. AJ had to be at work at 4 but luckily it wasn't to bad for him. The only bad thing was that he did not serve one table. Grrr. I hate snow. That is the only bad thing about working in the restaurant business in Tn. Everything shuts down because people do not know how to function in this weather. I was so exhausted yesterday after work. I don't know why I think the gloomy day was the reason behind my sleepiness. While I was working this is what all the boys did.
I ended up making spaghetti for AJ and I last night. We really don't have that much to eat because I am a bad wife and haven't been to the grocery store to get food. lol. I made our own garlic bread as well. It was really good spaghetti. I normally don't make the spaghetti, AJ normally does. I thought that I wasn't that great at making it but I am getting a lot better and I am starting to like it more and more eat time we have it.
Before I made dinner I was working a little on my lap top and the boys decided they wanted to cuddle. It was so cute. This just made my day... They are getting a long so well.

I went to bed at l0 because my exhaustion was taking over me. AJ came in after I went to bed and this is what he found.....
Moose did really well last night he had his crate door open all night, no accidents, and the boys didn't play they just slept. Which lets me know that when we move we won't need the crate in our room for sleeping time. The boys will just sleep in their beds. We probably will start seeing if Moose can be out of his crate during the day when we aren't home. That will be his next test of trust. Slowly but surely he will be able to do everything Diezel does.
AJ had to take me to work this morning because he was supposed to be doing delivery for Amerigo (they called and cancelled). I made him drive because of the slippery roads. I didn't know that I should of been the one he drove because when we got to my families neighborhood the entrance has a sharp turn and he didn't slow down enough. We went right over the curb and hit a bush. We almost hit the brick wall. Thank heavens that did not happen. Just show that you should drive extremely slow in the weather. I was so glad to look out the window later in the day and see that the sun had melted the snow/ice off the roads! Tn is going to have really nice weather this weekend so that means I can start walking the boys again. I want to take them to the dog park but I have to wait until after Diezel gets his shots updated and Moose gets neutered (I don't want to have to worry about Moose try to dominate another dog).
AJ has the evening off. I don't know what we will end up doing or what I am going to make for dinner. Hopefully AJ caught up on his shows while he was home all day. I was way ahead of him in our shows and it will be nice to be able to watch our shows together. Vampire Diaries is on tonight (that is my show, lol). We can also watch Law & Order SVU, The Mentalist, Blue Bloods, Perfect Couples, CSI, Fairly Legal, and Royal Pains.
I have to work at 12 tomorrow so I get to sort of sleep in :) but AJ has to work at 10 so I have to take him. I am happy tomorrow is already Friday. It will be a very busy weekend for AJ. We also should get our tax check tomorrow which will be nice cause I can pay Trevecca off.

Kick boxing kicked my butt!
Today was a nice day... I didn't really want to go to work this morning. I wanted to take the kids to the library for story time except when I got into work all the kids wanted to do was go see Moose. We packed up their stuff and headed to my place. Madeleine and Teddy were so excited about meeting Moose. They really had a good time when they were here. When Moose met them he walked extremely slowly up to them because they were little! AJ ended up riding back with us to the house so he could get the car and go see the Green Hornet with John. We had Chick-fil-a for lunch of course Teddy fell asleep in the car and didn't even get to have lunch. Madeleine hasn't been feeling to well the past couple of days her stomach has been causing her some issues so all she had for lunch was pretzels and some fruit. During there nap Rachel wanted to see some pictures of Moose, and then I played on the my mac!
When AJ picked me up we had to book it to the new apartment complex so we could give the application and the fee. Luckily she found a place on the bottom thank heavens. Could you imagine being above someone with xbox kinect, AJ coming home late, and on top of all that two huge dogs. I don't think so! Luckily we get two bedrooms. Then we went and got some groceries at Publix.
We ended up getting Publix subs for dinner. Which is normally our Monday daily routine :).....
When AJ picked me up we had to book it to the new apartment complex so we could give the application and the fee. Luckily she found a place on the bottom thank heavens. Well actually before I ate I worked out with the Kinect. YEAH!!!! I am already so sore..... At least I am not working out with Jillian Michaels anymore because I do not like Jillian Michaels.. I did the boxing and kick boxing tonight. It seriously kicked my butt. I love it though.. Your shape seriously is awesome cause it talks to you and tells you what you are doing wrong and if you are doing it correct.
AJ had his last basketball game tonight which I did not go to because I wanted to stay home and workout. Of course they lost really but at least they had a 3 game winning streak. Go Concord.
We had some friends over from AJ's work, well they both don't work there anymore. We played hand and foot. We also played on the kinect and I got a picture of AJ doing it. HAHAHAHAHA.

Well that is all for today. I am hope everyone had a good day. Please pray for my parents. They have been loosing family pets left and right. We first lost Chole (cat) right before Christmas, then Punkin (dog) passed away one week ago, and then yesterday Mom took Ole (cat) to the vets because he wasn't eating and ended up having to get him put down. So please pray for them. They are going through such a hard time. I love you Mom & Dad!

Moosey & Diezel
So yesterday I got up at 6:15 in the morning.. We had to be at church at 8am. Then we picked up Moose from Cookeville. Yes we are keeping his name Moose. It really fits him. I just call him Moosey. When he hoped out of the car it was like seeing Diezel in a different body. They look so much like twins except for their coat and color. As soon as we got into the car Diezel already showed who was boss. Luckily we had Bobby's SUV. Diezel had backed his rear end to the opening between the front seats and faced Moose to make sure Moose could not get to us. It was hilarious. It was a little stressful at first because they were trying to establish dominance. It was just loud and made stress out but I had to let them do it. Diezel won of course. He seems to be a lot stronger and a lot more experience play fighting with other dogs. We ended up all taking a nap because we were all so exhausted from the day. The boys and I took a walk last night as well. It was so easy walking both of them. Moose is professionally leash trained so he is a breeze to walk. Diezel had his gentle leader on so he was a breeze as well. They both seemed to enjoy it.
Today wasn't as bad. Obviously it is going to take all of us some time to get used to each other. The boys were getting a long much better today. They were playing and stealing the balls and bones from each other. They are wearing themselves out. They have to take break cause they play so hard. I scheduled Moose to get neutered on Monday. He tried to mark our furniture twice luckily we caught him and scared him to death. It will also help Diezel in his dominance. He also had an accident but luckily he ran to go potty on the tile luckily just pee. He had to go. We aren't just used to each other schedules.
AJ is loving having both of them. He is helping me out already so much more. Diezel already had a bath this evening and when AJ gets home he will give Moose a bath! He is also doing some more training with both of them. Like keeping them out of the kitchen, keeping them away from the table while we are eating, waiting for the humans to go in and out of the door first, and fixing Moose's jumping habits.
Moose is such a sweetheart. All he does is want to be loved and do anything for you. He finally learned that he was allowed to get on the couch and bed when asked. He fell asleep sitting up with his head in my lap while I was working today! Well that is enough for today. Thanks for reading...

Well we found out today at 3pm (Central standard time) that we have a new member to our family. I am so excited. I can't wait to go pick him up after church tomorrow! Here is the new member of our family!!!

We have added some new names to our list and have taken off one name from the list. We took off the name Denver because we have a friend named Denver. I think it might be a little weird if Denver came over and we had a dog named Denver as well.. We will keep that name on reserve for another time. So now the names that are on our list are Greyson, Miles/Myles, Hurley, Burke, Sawyer, and Potter. I will post more pictures of the big baby tomorrow after we get him. My sister Christine still wants to call him Moose since she calls Diezel, Horse. That might not be a good idea sissy cause he might get confused since we are changing his name. You might want to think about another big animal to call him.
I went shopping with Christina today its been awhile since we did that. I did not buy anything of course, but I still like hanging out.. I wasn't even tempted to buy anything. Which is amazing.
Tonight I get to video chat with my best buddy JoAnna for the first time ever!!! This will be so much fun can't wait to see her face.
I am not looking forward to having to be at church at 8am tomorrow. I am going to have to go to Starbucks in the morning and actually have coffee.. If you don't know me that is a really rare thing when I actually need to have coffee. I don't feel all that well today. I am a little stuffy and my ear is kind of ringing right now. It is really annoying..

Thank Heavens its FINALLY Friday!!!!
Well today is the day we are supposed to find out about Moose... It might not be until tomorrow though :(.... I am absolutely going crazy... AJ finally told me that he does really want him as well. So hopefully we will get blessed and be able to go pick him up either tomorrow or Sunday.
I didn't work out last night.. I am such a slacker but I actually have a good reason for not doing it. Yes, I know excuses, excuses. I had a headache (first in over a month) and I also had a stomach ache. The reason I got these is a very interesting story. I had to get a ride home yesterday from my bosses husband and well he is not that great of driver. Possible the worst I have ever rode with! He blamed the other drivers when really it was all him! Anyways he was riding their tails and while he was riding their tails he would look back at the kids and talk to him.. Meanwhile, I am watching and he almost got us into an accident at least 5 times on the 10 minute drive back to my place. I was getting a stomach ache and had that mild headache that gets really annoying. I get very car sick in the back seat but I do not think I have ever gotten car sick in the front seat. Lets just say when we stopped at my place I wanted to literally scream LAND!!!!!!
I did end up making home made chicken tacos last night! I could seriously eat mexican ever night. I even made homemade shells. Well, I fried the corn shells. Here is what the tacos and chicken looked like after I was done making dinner!

I waited for like two hours for my best friend JoAnna to get off work and give me a call. I wanted to video chat with her last night, but the slacker fell asleep watching a show! Now I have to wait until tomorrow to video chat with her. Christina and I ended up video chatting because her golden Gracie was acting crazy and I wanted to see it lol. That dog notices everything on the tv it is so hilarious. Christina had her dvd player on pause and you know some dvd players have a box bouncing around to keep the tv moving and not still so it doesn't burn the picture into the screen. Well Gracie was watching that box bounce around on the tv... Silly girl!
AJ is feeling so much better thanks for thinking and praying for him to get better. He had an awesome night at work last night in which we needed. He has to work tonight and all day tomorrow :(.
So not looking forward to Superbowl Sunday. I hate FOOTBALL!!! We either might be going to the a small group super bowl party or staying home and have our friends from school come over. It seriously all depends on if we get Moose and what the boys of course want to do. It would be nice to get some wings though. I haven't had wings in a really long time. We haven't found a wing place close to us besides Mineo's which we normally go there for my favorite pizza!
So, I have decided that the Cliff Bar: Chocolate chip is one of my favorite organic bars.
I have to work until 8pm tonight but it might be fun. Rachel my boss when she gets off of work just might take the kids and I with her to run errands and get some dinner. I love doing that. She is also fun to hang out with and talk to :) ... I will be impatiently waiting by my cell phone to see how the other girl that is meeting Moose tonight likes him or how it goes. His owner emailed me today and said that it was supposed to rain in Knoxville so the girl will have to meet Moose inside. She said that might be a little over whelming for her because Moose will be super crazy because his family would have just got home! I don't want to wait.. Hopefully running errands and eating dinner with Rachel and the kids will take my mind off things.

Madeleine & Teddy
Well Madeleine, Teddy, and I went to the library this morning and we picked out some new movies to watch... Then we went to Sonic and got some morning drinks! Madeline got a blue coconut slush, Teddy got a orange slush, we got AJ a watermelon slush, and I got a coke. (yes I know what a great morning drink).... Well then we decided to come back to my place to play with Diezel and watch the movie Enchanted...

Last night we had choir practice at church it was really productive... I had a nice time. We had a lot of people come to sing in the Easter choir. Also the new format that we seem to have in choir is so much easier to work with. . Sunday I will be on the Praise team or Celebration Choir Singer, whatever you want to call it... We will be singing Open the Eyes of my Heart Lord, Our God, and Your Name.. I never heard the song Our God until last night.. I thought it was the song Our God is an Awesome God.. lol. What an old song!!!
Then I came home and had left overs from our dinner last night... So no new recipes today... My dinner plans tonight is to make home made chicken tacos :) YUM!!!! Then as soon as I was done eating I had to go pick up AJ from work.. Then I watched The Good Wife and listened to Our God while practicing the parts. Its great to be back singing...
I have to wash all our sheets tonight because AJ would have been on is medication for 24 hours so he is no longer contagious. I would also like to clean and disinfect our whole house.
This whole blog thing is kind of nice idea. Hopefully I can keep on it. I got to say though I love using my mac and blogging it is so much easier.. I am now a mac person forever! We will have to one day become a mac family!
Yesterday, I figured out what our tax check was going to: first it will go to pay off the rest of AJ's bill at TNU so we can get his diploma and he can start applying for schools.. Then it will go to pay off one of our credit cards. We will have $300 more a month after the TNU bill is gone and then my car will be PAID OFF March 4 so that will be an extra $265 a month.. WOW it is so amazing to get rid of bills!!!! My goal is to be credit card free!
Okay so I told you I would let you know about dog names we have picked out for Moose.. Ok here is what he looks like again..... If you think of any names you like let me know (Comment)...... Also we will know tomorrow if we get him. So pray we do and I will keep you posted.

First Blog with my new MacBook Pro!!!!
So my mac book came in today. Happy Birthday to me early from my husband!!! lol... I love this thing. Now I got to make sure I am working it correctly. Went from a windows to a mac! I know how to mostly use it because at school in the music department all we had were macs. This thing is awesome.. Okay enough about my computer. Hopefully now I can video chat with my best friend Joanna.. Dear JoAnna you need skype as well on your macbook!
So I have been going crazy about this dog we might be getting. We will not know until Friday if we can have him because someone else is looking at him. I hope we get him, but if we don't it will be okay as well. If you guys dont know the whole story about this dog I will give you the story about it. Keep in mind that AJ and I did want another silver lab at some point. Just didn't know when exactly. We really wanted a sibling of Diezel and a lighter silver lab. That wish was not going to come true because Diezel's breeder had Norah (Diezel's mom) spayed. Well on Sunday night Diezel's breeder posted on facebook that one of the families that got a puppy was putting him up for adoption because the family didn't have time for him anymore so they don't want to be selfish anymore. AJ and I jumped at the chance because now our wish was back into play. It would be good thing for Diezel to have a friend! At the moment the dog's name is moose. Which if we did get him that would have to change (names posted later). I am trying not to get my hopes up but it is kind of hard not to because I really want him to be ours! We also decided that we were going to move out of Southwind Apartments this week. We are going to move directly across 96 to Royal Oaks Apartments. So we can have a two bedroom for twenty dollars more than we pay here. I have wanted a two bedroom for awhile. If we do get another dog its good cause we will have more room for the both of them.
AJ went to the doctor today and found out he has strep throat. Luckily I can not get it. I have my tonsils removed in college so that is why I can't get it!!! HAHAHAHA. But I am staying clear of him so I do not get any other type of cold.
He had a basketball game last night but couldn't go because he was so sick. I know he wanted to go and play even though he is sick because that is the type of man he is but I made him stay home! I am such a horrible wife! lol. Well the team won though... WOW Concord three games in a row! It is about time :) Good Job!
I didn't workout last night.. Please send me some motivation since I got out of my routine while my family was in town. I have been doing the Kinect work out called Your Shape. It is awesome and I love it. I have never sweated so much in my life (yes I know very gross) but even when I was doing P90X I was not sweating that much and that is a kick butt work out. I WILL WORK OUT TODAY!!! I WILL!
I made some awesome dinner last night it was amazing! We had brown sugar glazed pork and roast asparagus with crispy prosciutto. I am bias but it was AMAZING! I dont really like asparagus all that much either and I ate all of mine. Here is a picture of the brown sugar glazed pork with recipe to follow:
Brown Sugar Glazed Pork Ingredients
- 1 pork tenderloin (about 1lb)
- 2 tablespoons of light brown sugar
- 2 teaspoons of Montreal steak seasoning
- 2 tablespoons butter, divided
- 1/4 cup red wine
- Crush garlic, using garlic press into medium bowl. Use knife to remove garlic from press. Stir in brown sugar and steak seasoning until well blended.
- Preheat large saute pan on medium heat 2-3 minutes. Cut pork diagonally into about eight 1 inch thick slices. Place pork slices in bowl and press into mixture. Turn and press again to lightly season both sides (wash hands).
- Place 1 tablespoon of the butter in pan; swirl to coat. Add pork (wash hands); to cook 5-6 minutes on each side or until well browned and internal temperature reaches 160 F (for medium). Use a meat thermometer to accurately ensure doneness.
- Remove pork from pan. Stir in wine and remaining 1 tablespoon butter; simmer 1 minute, stirring continually. Serve wine sauce with pork.
Roast Asparagus with Crispy Prosciutto
Ingredients:
- 12 oz asparagus spears, trimmed
- 1 small handful of fresh basil leaves
- 4 prosciutto slices
- 2 tbsp olive oil
- salt and ground pepper
- Preheat the oven to 375 F. Put the asparagus in a roasting pan and drizzle with the olive oil . Sprinkle over the basil and season with salt and ground black pepper. Gently stir to coat in the oil, then spread the asparagus in a single layer.
- Lay the slice of prosciutto on top of the asparagus and cook for 10-15 minutes, or until the prosciutto is crisp and the asparagus is just tender. Serve immediately.
Hopefully if you use these recipes you will like them.. I loved them and that has to say something since I am a very picky eater. Well that is all for right now, thanks for reading.
