The Haunting of the Thin Mints....

So as you know AJ and I started really watching our diet. Yesterday was the first full day of doing this. I had 5 cups of water WOW!!! If you know me that is insane. For breakfast I had 5 oz of Orange Juice, Yoplait light strawberry yogurt and bear naked fit vanilla almond crunch granola mixed in m yogurt.  For lunch, I had 6 strawberries cut up on top of two cups or romaine lettuce with olive oil and balsamic vinegar as the dressing. I also put the granola on top of my salad. I had to get some more protein so I drank a cup of 1% milk with carnation instant breakfast. For dinner I made oven baked brown rice which was actually pretty amazing in the oven.


Fool Proof Oven Baked Brown Rice




Ingredients

    1 1/2 cups Brown Rice (uncooked) 2 1/3 cups Water 2 tsp Olive Oil 1 tsp Salt


Directions

Preheat the oven to 375 F and move a rack to the middle position. Spread the rice into an 8-inch square, glass baking dish. In a covered saucepan on the stove, bring the water and oil to a boil over high heat. Once it begins to boil, stir in the salt and pour over the rice. Cover the baking dish tightly with a double layer of foil. Bake for one hour, until tender. Remove from the oven and uncover. Fluff the rice with a fork, cover with a clean kitchen towel; let rice stand 5 minutes. Uncover for another 5 minutes, then serve immediately. 


I also added a 2 teaspoon of curry to the boiling water along with 2 tablespoon of soy sauce. AJ and I also shared 1 chicken breast. I marinated it in worcestershire sauce, a little pinch of brown sugar, and some red pepper flakes. For our vegetable we I made roasted edamame here is the recipe:

Roasted Edamame


Ingredients

    1 tablespoon olive oil 1 teaspoon garlic powder 1 teaspoon chili powder 1 teaspoon onion powder 1 teaspoon paprika 1 teaspoon black pepper 1/2 teaspoon kosher salt 1/8 teaspoon cayenne pepper 2 cups ready-to-eat shelled soybeans (edamame)


Directions

Preheat oven to 375 degrees F.

In small bowl mix all the ingredients until coated well. Roast beans in a shallow baking dish, uncovered, for 12 to 15 minutes, stirring once, until soybeans begin to brown. Yields 4, 1/2 cup servings.


It was actually really good. 

For my workout I walked the boys on their normal walk with me, then I did my kick boxing workout with the xbox 360 kinect, and did some strengthening exercises. 

Of course on Saturday before we went on this watching what we eat kick I bought thin mint girl scout cookies and put them in our freezer they have been haunting me... lol. I haven't had those cookies in about two years. Which is crazy. I forgo how good they were and now they keep screaming eat me from the freezer. hahaha.

Why does eating healthy cost so much? 

I haven't really eaten that much today. I got up late so all I had for breakfast was a Clif Crunch Chocolate Chi[p granola bar, also I got up late so I didn't have a chance to pack my lunch. Luckily the family I watch a health crazy. I had one flour tortilla, an orange, and a Clif crunchy peanut butter bar. I only have to walk the boys today and do some strengthening exercises. 

For dinner we are having organic meatless spaghetti and either a salad or asparagus.
